Dr. Soucy may not be easy, but he is a great professor. Easily one of the best professors I've ever had. There's nothing wrong with requiring a little hard work and attention; this is college, you know! He is passionate about the subjects he teaches and is very smart. If you want to actually learn something, give him a shot!
