I studied with Chef Lima in 1992. He was awesome. He helped make me the man I am today. The culinary principles he taught me resonated out of the kitchen. "Mis en place" was his motto, which means that you must be prepared before you begin. I'll never forget that. It carried through to other parts of my life. I'll never forget him. He's a great man
