Really good professor, very knowledgeable! Although his lectures are mandatory they're actually interesting and interactive. He is very kind, respectful and cares about his students. If you read and do the work, you will pas this class with an A! His quizzes and test are book and lecture based, nothing that wasn't covered in class. Take him!!

PLEASE, DO NOT TAKE HIM IF YOU NEED AN CLASS WITH AN A. He tried so hard for you to fail class at the end of the semester. Just take ANYONE ELSE but NOT HIM.

I walked into this class thinking it would be an easy A but I struggled toward the end. Dr. Murphy is nice, but he does get off-task while lecturing and we'll sometimes miss important information because of it. During Summer B, it involved weekly quizzes, lecture attendance and a discussion post. Final was harder than I thought, therefore I got a B

I took him after reading his reviews that say he's self-absorbed. He talks about himself a lot and digresses from the lectures frequently. I didn't think he taught at all. I mean I can read PPTs on my own. He has 2 lectures, 2 quizzes and 1 discussion board due every week. The Final Exam was open note but it was based on LECTURES not the txtbook.

Honestly, this was the hardest class I had so far in UCF. He says that he does not believes in extra credit and rounding up a grade, so get ready. The final was just awful. Throughout the course, the quizzes are based on the book, but final is based on the lectures. 1) Not enough time! 2) Actual questions like "how many cakes your professor made".

Youre gonna have camera recording you each quiz. Final exam is extra hard, time limits are bad on all quizzes (less minutes than questions). Lectures are fine, but mandatory. I don't understand his grading system sometimes. I didn't learn a lot of information which is necessary for my degree.

Self centered egomaniacal Chef who spends more time bashing his wife then teaching the class. News flash Sir, there is no R in idea! Labs are even worse and you spend 6.5 hours a week in a 4 credit hour class

Took sanitation online. The syllabus outlined everything you would be doing for the entire semester. No changes were made so you knew what to expect each week. Very organized and quick to get back to you with grades. If you are organized, this class will be a piece of cake for you!

Summer semester study abroad, cost $5k+, and a lot of work. He grades unfairly. I wish I never spent that much money; it does not worth it. If you want to travel, better just to buy a ticket and go on your own: your GPA won't suffer!

Took Sanitation of food service online. For someone who has done a few online classes he is HORRIBLY disorganized. His powerpoints dont match up with the book which don't match up with the quizes and tests. I ended up using google a lot and just guessing. Doesn't seem to care about online class - just collecting a paycheck with minimal work!

Took restaurant management online, quizzes were unnecessarily difficult and the midterm exam questions referred to information we learned in-class. If you noticed I said I took this online. He was fairly unorganized making keeping up with an online class difficult.

He is very laid back and openly uses profanity in class. However, dont let his personality fool you, his tests are tricky and lab involves lots of physical work and effort. Dont feel 3 credits is enough for the the amount of lab work involved and he never gives a perfect grade on lab. The lab instructor was strict and at times rude to students

Class was okay, goes over powerpoint and you leave 15 mins early each time. Grades on 3 test, lab, project, participation(everyone starts off with a 70 and pretty much gets a 70). Test were kind of tricky but are passable. Does not curve or go over test. I passed with a B but I was pretty sure I had a C. Murphy was pretty laid back though.

Comment:

Murphy, or Kevin, as he'll have you call him, is an interesting professor. He liberaly uses profane language, which is quite entertaining. I never knew the lecture portion of a cooking class could be so interesting, but Kevin made it that way. Beware of making smart comments in class, he'll come right back with something better!

He has powerpoints which his tests are from and allows a cheat sheet which is helpful to the students and he shows care to accommodate us. He sends out emails informing us about changes that happen throughout the class.
