Would not recommend. If you run into any problems or questions you are screwed. It's a fairly easy class if everything goes smoothly and you don't have to interact with the professor but if you do he is not very understanding.

If you are in culinary there is no way around taking his classes. Chef Pierre is a great teacher who keeps things simple for students. All his classes in the kitchen are great. I took him for catering as well. Don't expect an interesting class. Very boring! But its catering... His greatest strength is teaching people the science of food.
