Chef Frank Leake is a class act and one that is extremely hard to follow. I have never learned more about the importance of all the menial tasks that a true chef must know and master. From proper labeling, recipe conversion, mise en place, proper caramelization, the importance of daily reflection and the respect of food. Thank you Chef!

Don't bother taking this class. If you can, take the PM class that another chef teaches. Nit picking the smallest of things is an understatment and at most times it's very unnececary and just for his entertainment. Be prepared to watch him do his demos for 80% of the class, then expect you to get everything done in a small amount of time.

If you have a question about something he's said or you just want clarification, be ready for an rude response about not paying attention. Do the homework or you won't pass. Show up early to get past work done. Makes you write about his book. 3 reflections a week. watch all the videos. ALL OF THEM. Ask questions.

Best teacher ever, even though it seems like he was hard but to be honest he can be fun at times. Very precise on what he really wants and very helpful with everything that he teaches. Yes, he is strict and people do drop but It is only hard if you make it hard on yourself!!! Take his class you will not regret it!

VERY STRICT... make sure you get to class early to prepare your mise en place for the day, even as early as 530am. Work clean, work hard. Do all the assignments, take tons of pictures for the daily reflections. Be as organized as you possibly can.

Very strict teacher. He repeats himself ONCE.He expects you to know the answer, not the other way around. You actually start at 5 AM if you have to make up work. A warning to everyone considering this class, work and expectations, not for the faint hearted.

THE strictest chef in the school. If you pass his class, you are pretty much guaranteed to do well in the higher classes. There is a lot of writing (daily, weekly, and course reflections). He expects a lot out of his students, but you learn a lot in return. Definitely not a cruise teacher
